Raw Corned Beef Briskets
Carefully trimmed, slow cured.
Hand picked for size and trim.
For best results steamed or boiled in water for a minimum of 2 -1/2 hours.
Each piece weighs approximately 9-12 lb.
Cooked Corned Beef Eye Rounds
Selected eye rounds are trimmed lean and cured.

Trimmed lean, cured and cooked.

Cooked 1st Cut Catering Corned Beef
The Corned Beef Brisket is cooked, then re-trimmed, leaving only the lean 1st Cut for lean sandwiches and deli trays.
Each piece weighs 3-4 lbs. No 1/2s.
Fresh Raw Corned Beef Bottom Round Split
Fresh / Raw, Beef Bottom Round Split (Cut in ½). Nicely trimmed with little fat.
Both muscles are very lean inside. Pickled and packed with spices.
To be cooked and used in sandwiches, catering trays, Corned Beef dishes or Corned Beef Hash.
